Josh’s Mild Jambalaya

Jambalaya is a well know dish in the state of Louisiana in the USA.  Jambalaya is typically a spicy and very tasty rice and sausage dish.  It’s origins are unknown, but it is believed that Jambalaya was influenced by multiple multiple cultures including European and African.  However it came about, it is a very tasty dish that almost every American enjoys today, not just in Lousiana, but everywhere.

Jambalaya is known to be a spicy dish, but some people do not like spicy food and other people are sensitive to spicy food.  Thankfully there is a way for these people to have their jambalaya and eat it too.

Ingredients

  • 1 large onion or 2 small onions chopped
  • 2 stocks of celery sliced
  • 3 cloves of garlic minced
  • 1/2 bell pepper cored and diced
  • 2 smoked sausages (kielbasa works) sliced
  • 1 chicken breast diced
  • 1/4 cup ghee (for pan)
  • 1/4 tsp thyme
  • 3/4 tsp creole seasoning
  • 1/2 tsp salt
  • 1 1/2 cups long grain rice
  • 1/2 can of diced tomatoes (7 1/4 oz)
  • 2 cups chicken broth or stock (add additional as needed)

Directions

  1. Pre-heat pan to medium to medium high heat
  2. Melt 1/4 cup of ghee in pan
  3. Add chopped onions, celery, and bell pepper to the pan
  4. Add thyme, creole seasoning, and salt to the pan and mix
  5. After onions, celery, and bell pepper cook 3 minutes, add garlic
  6. Cook a few minutes until vegetables are softened,
  7. Add chicken breast and cook until barely done
  8. Add smoked sausage slices and cook another 3 minutes while mixing around
  9. Add rice to the pan and mix around
  10. Add diced tomatoes to the pan and mix around
  11. Add chicken stock until all rice is covered 100%
  12. Bring broth and mix to a light boil, then lower heat to a simmer and simmer for 30 to 40 minutes or until rice is completely cooked.  If rice is not finished and you are out of broth, feel free to add more broth until rice is done.

Should serve 4 to 5 people.
