Ingredients
- 1 1/2 to 2 pounds chicken breast brined
- 1 cup flour
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon thyme
- 1/4 teaspoon chili powder
- 1/4 teaspoon red pepper flakes
- 2 eggs well beaten
Instructions
- Preheat deep fryer to 350 degrees (or you can fill up a skillet about 2 inches high with oil)
- Brine chicken breasts in 4 cups water with 1/4 cup of kosher salt for 30 minutes to 2 hours
- Combine flour and dry ingredients in a mixing bowl
- In a separate bowl beat 2 eggs until smooth
- Chop chicken into strips
- Add chicken pieces to flour/spice mix first, shake off any excess, add to egg mix, coat completely, and dip chicken again into flour/spice mix until chicken is completely covered. Shake off any excess and allow chicken to rest 5 to 10 minutes on a wire rack
- Making sure chicken strips are spaced apart, place chicken strips in deep fryer basket. Dip into hot oil in deep fryer and allow to deep fry about 5 minutes or until crispy and golden.
- Remove chicken from deep fryer and space in a dish covered in paper towel (to soak up oil).
- Allow to rest 5 minutes. Make sure you aren’t stacking cooked chicken on top of each other, otherwise the oil from one can drop to another and cause some chicken strips to be oily.
- Dip in your favorite dipping sauce whether that be BBQ sauce, honey mustard, Chick FilA sauce, my Hungarian dipping sauce etc etc.
