Danish Feta Cheese Stuffed Tomatoes

These Feta Cheese stuffed tomatoes are not an American dish by any stretch of the imagination.  BUT, they fit in well with other American Dishes and with American Traditions such as Barbeques and American holidays.  We’ve eaten these on the 4th of July, the Superbowl, and during other American festivities.  It’s a great appetizer and when you prepare it for any gathering, it’s guaranteed to be a hit!  Add a little taste of Denmark to your meal plan TODAY!

Ingredients

4 Large Hothouse Tomatoes Chopped in half

​Dash of Pepper

​1 Cup Mayonnaise

​1 Cup Feta Cheese Crumbles

​2 Green Onions chopped to 1cm

​1/4 teaspoon Thyme

​Dash of Salt​

Instructions

  1. Set oven to broil on high
  2. Chop 4 large tomatoes in half
  3. Core tomato halves so they are hollowed out
  4. Add a dash of pepper across each cored tomato half
  5. In a bowl, add the mayonnaise, feta cheese crumbles, green onions, thyme and a dash of salt
  6. Mix together well and add one more dash of salt
  7. Divide mixture evening cross all 8 tomato halfs
  8. Add stuffed tomatoes to a cookie sheet or broiling pan with cheesy side up
  9. Broil on high for 5 minutes
  10. Remove from oven and let cool for 5 more minutes
