Ingredients
Fish and Fish Broth
- Enough water to fill pot with 4 inches of water
- 28 ounces cod fish
- 1/3 cup salt
- 2 tbsp white vine vinegar
- 1/4 tsp black pepper
- 1 medium onion peeled and chopped in half
Egg Sauce
- 2 eggs boiled and chopped finely
- 1 tbsp Italian Parsey chopped
- 1 tbsp chives chopped
- 1 tomato peeled and chopped
- 1 stick of butter
- 1/3 cup fish broth from above
- Salt and Pepper to taste
Garnish
- 2 Carrots boiled and chopped
- 1 lemon juiced
- 1 or 2 more lemons sliced for garnish on plate
Instructions
- Add 4 inches of water to a large pot
- Add the 1/3 cup of salt to water
- Add white wine vinegar to water
- Add the 1/4 tsp black pepper to water
- Add the two halves of onion to the water
- Bring water to a boil and let boil for 5 minutes
- Reduce heat to simmer and add the cod
- Simmer cod for 5 minutes
For the Sauce:
- Melt stick of butter over medium heat in small pot
- Add chopped egg to melted butter
- Add 1/3 cup fish broth (from water where fish boiled) to butter and egg
- Add chopped tomato
- Add parsley and chives
- Add salt and pepper to taste
- Mix all together and heat for about 3 minutes
For the plate:
Add squeezed lemon juice to chopped carrots and mix
Add cod fish to plate, garnish with a fresh lemon slice. Add the chopped carrot and buttery egg sauce on top. Add additional salt and pepper to taste if desired
