Josh’s Spicy Mac & Cheese

Then there’s my take on Mac and Cheese here at Josh’s World Kitchen. A spicy mac and cheese using Pepper-Jack cheese, jalapeños, and spicy hot dogs. It’s the familiar cheesy bite, but with a kick! I invented this recipe, and I hope you enjoy it as much as my teenagers and I did.
Ingredients
- 12 ounces elbow pasta
- 1/4 cup butter
- 3 tablespoons flour
- 1 1/2 cups heavy cream
- 1 1/2 cups milk
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cups shredded Pepper-Jack cheese divided, plus more for topping if desired
- 1 tablespoon avocado oil divided
- 2 hot links sautéed and chopped
- 1 – 2 jalapeños seeded and diced, and cooked
Instructions
- Preheat oven to 350 degrees F
- Boil 12 ounces of elbow pasta in salted hot water until al dente (about 6 minutes), strain the pasta with a colander and add to a pot or bowl, set side for now
- Place 1/2 tablespoon of avocado oil in a small skillet over medium heat
- Add spicy hot dogs and roast until just started to turn slightly brown
- Once cooled slightly, chop hot dogs
- In another skillet add 1/2 tablespoon of avocado oil over medium heat
- Add diced jalapeño to the oil and sautée for a few minutes until tender
- in a small to medium size pot over medium heat, add butter and allow to melt
- Add the flour to the melted butter and blend the flour and melted butter until it forms a roux
- Add heavy cream and milk to pot, increase heat to medium to medium high, combine cream, milk and roux with a whisk until it’s all blended together
- Gradually add 1 cup of the shredded pepper-jack cheese to the pot, whisk together until all combined (about 5 minutes)
- Add in the salt, pepper, hot dogs, and jalapeños to the pot, combine another 2 minutes
- Add contents of pot to the bowl of cooked elbow pasta, combine well
- In a 9×13 glass baking dish, add 1/3 of cheesy pasta to form 1 layer
- Spread 1 cup of the pepper-jack cheese over 1st layer
- Add another 1/3 of cheesy pasta to form another layer
- Spread another 1 cup of cheese over the 2nd layer
- Add remaining mac and cheese on top.
- Cover baking dish with foil
- Place in the oven and bake 15 minutes
- Remove from oven and remove foil
- Add remaining 1 cup of cheese over the top of mac and cheese, may add additional cup if desired
- Place back in the oven without the foil this time and allow to bake another 10 minutes
- Remove from oven and allow to cool for 5 minutes before serving
Serves 4 to 5 peolple
