Oven Baked Chicken Thighs
Very often we are very busy and we don’t have time to cook a very tasty and elaborate meal, and at that same time we are craving something very tasty. So what can we do? We can buy a bunch of frozen meals from Costco. They are tasty, right? But are they the healthiest option? Probably not. So here is a recipe that all three. Healthy, simple, and tasty! I bring to you Josh’s Oven Baked Chicken Thighs.
Ingredients
4 to 6 Bone-in, skin-on chicken thighs
4 cups cold water
1/4 kosher salt
Extra Virgin Olive Oil
2 parts Garlic Powder
1 part Onion Powder
dash of salt
Directions
1. Pre-heat oven to 400 degrees
2. Add 4 cups of cold water to a large bowl
3. Add 1/4 cup of kosher salt to the water and let dissolve
4. Add chicken thighs to water/salt brine. Let them soak in brine for 30 minutes to 2 hours
5. Remove chicken thighs from brine and place on a small, but sturdy cookie sheet
6. Brush one side of the chicken thighs with olive oil
7. Sprinkle generous amounts of garlic powder on same side
8. Sprinkle half the amount of onion powder on same side
9. Sprinkle dash of salt on same side
10. Flip chicken thighs over and repeat steps 6 through 9
11. Place cookie sheet with chicken into middle rack of oven
12. Bake for 35 minutes
Enjoy with a side of vegetables and potatos!
